That depends. If the potatoes are uncooked, then no, I wouldn’t recommend that. If the potatoes are cooked and the roast is cooked, then yes, it’s fine.

There are lots of choices for what to do with left over pot roast and here are a few ideas…
- Freeze the left over pot roast – it freezes well and will last 3 months in the freezer. Place in a freezer safe bag and remove as much air as possible. Seal.
