Easy Corn Pudding

A friend of mine often brings this dish to potluck dinners and it disappears before you can even say “Corn Pudding with Jiffy Mix“.

My own family reluctantly tried this dish at a family dinner and before you knew it, it was the one dish everyone was going back for seconds and thirds!

Just know that this is a savory pudding, not a sweet pudding like my Banana Pudding.

Here’s What You’ll Need:

  • Butter
  • Eggs
  • Sour Cream
  • Can of Corn
  • Can of Creamed Corn
  • 1 box of Jiffy Mix

Here’s How You Do It…

  1. Mix All the ingredients in a bowl
  2. Pour into baking dish.
  3. Bake for 35-45 mins! (It’s really that EASY!)

Can I Make this Recipe Without Creamed Corn?

If you don’t like creamed corn, don’t worry, you won’t taste it! Creamed corn gives this recipe it’s moisture and rich corn flavor. While you could make it without the creamed corn, it won’t turn out the same.

Can I Make This Recipe Without Jiffy Mix?

Again, you could try making this recipe with some kind of substitute for the Jiffy mix, however, I have a feeling that the Jiffy Mix is the magic ingredient here that brings the whole thing together.

How Long Does This Last?

This recipe will last up to 5 days if kept covered in the refrigerator.

Can I Freeze This Recipe?

Yes, you can freeze this recipe for up to 3 weeks in a freezer safe container. Reheat gently in a 325 oven.

  • If you purchase the 8 oz container of sour cream, there is nothing to measure for this recipe, it is completely dump and go.
  • Spray the corn pudding baking dish with non stick spray before adding the pudding mix for a delicious dish that pops right out of the pan.
  • Melt the butter in the microwave in the bowl you will use to mix up the pudding and you’ll save yourself from washing an extra dish. That makes this Easy Corn Pudding Recipe even easier!
  • Spice up your corn pudding with some chopped jalapeños, bacon or other delicious ingredient.
  • This dish travels GREAT! Just put some aluminum foil over the top and take it wherever you need a potluck dish. It’s great at room temperature too!

Ingredients

  • 1 stick butter (1/2 cup)
  • 8 oz sour cream
  • 2 whole eggs
  • 1 15 oz Can of corn drained
  • 1 15oz Can of Creamed Corn
  • 1 box Jiffy Corn Muffin Mix

Instructions

  • Preheat the oven to 350 degrees and spray a 9×13 or 9×9 baking dish with non stick spray. Set aside.
  • Melt one stick of butter in the microwave (about 1 minute) in a medium sized microwave safe bowl.
  • Add the sour cream, eggs, corn, creamed corn and muffin mix to the bowl and mix well. Be sure to mix well enough that the sour cream is well incorporated.
  • Pour the mixture into the baking dish and spread with the spatula.
  • Place into the preheated oven on the middle rack in the center of the oven. Bake for 35-45 minutes until the corn pudding is set and only slightly jiggles when you shake the sides of the pan.
