Mississippi Chicken Instant Pot Recipe
Have you tried my delicious Perfect Crockpot Pot Roast? yeah, that’s a mississippi pot roast recipe. This Easy chicken recipe is the chicken version and instant pot version of that wonderful, flavorful chuck roast delicious meal!
This is the best chicken recipe, easy weeknight meal and one of my favorite ways to get an eye popping dinner on the table in minutes! Pepperoncini chicken has that Mississippi chicken taste with a less heavy vibe than the pot roast recipes and we really love it!
Here’s The Simple Ingredients You’ll Need
- Juicy Chicken (fresh chicken)
- Pepperoncini peppers (banana peppers will work)
- Chicken Broth
- Au jus mix
- Ranch Dressing Mix
- Head of Garlic
- Bay leaves
Here’s How You Do It
- Place the boneless skinless chicken thighs or skinless chicken breasts in the bottom of the pot.
- Add the ranch seasoning mix, au jus gravy mix, peppers (and a little of the Pepperoncini juice), garlic, bay leaves and chicken broth to the instant pot on top of the chicken.
- Set for 8 minutes and allow a natural pressure release.
Tips and Tricks
- If you need to have this easy meal on the table more quickly, you can do a quick release after the cooking time and then allow 5 minutes before changing the sealing position to “release”.
- If using bone-in chicken breasts or thighs, do a 10 minute cook time.
- You can use a chicken or turkey gravy seasoning packets instead of the Au Jus, but the au jus has better flavor and is our family favorite.
- To change the cooking method to make slow cooker mississippi chicken, simply put the ingredients in the slow cooker and cook on low for 8 hours or high for 4 which will get you the flavor of Mississippi Chicken without the fast delivery.
- It’s fine to use homemade ranch seasoning if you are averse to using the kind from the grocery store.
- This dish is terrific when served over white rice, mashed potatoes or cauliflower rice if you are watching your carbs.
- Keep any leftovers in an airtight container in the fridge.
- This makes a great freezer meal as it freezes very well OR you can put the raw ingredients in a freezer bag together and then plunk the whole frozen thing into the pressure cooker and cook on high pressure for 15 minutes and allow a natural release.
- A great recipe for leftovers is to make instant pot mississippi chicken sandwiches by using the shredded chicken from this meal, serve over a hoagie roll, place into the air fryer for melted provolone cheese over the top! Yum!

Substitutions
Chicken – You can use literally any cut of chicken. you prefer, use chicken thighs, boneless chicken breasts, bone in pieces, legs, wings, chicken tenders, white meat, dark meat, it’s your choice.
Pepperoncini Peppers – Use banana peppers for a similar taste or leave these out and add 1 Tbs of white vinegar instead if you are concerned about the heat.
Chicken Broth – Use a mixture of 1 tsp of chicken broth concentrate and 1/2 cup water.
Au Jus Packet – It’s fine to use chicken or turkey gravy packets instead.
Ranch Dressing Seasoning – Feel free to make your own seasoning.
Head of Garlic – Use 1-2 Tbs minced garlic or 2 tsp garlic powder.

Easy Instant Pot Mississippi Chicken Recipe (w/video)
Ingredients
- 2-3 lbs Chicken Thighs or Breasts* Boneless/skinless
- ½ cup chicken broth
- 4 pepperoncini peppers. Leave whole or slice as desired
- 1 1 oz packet Au Jus
- 1 1 oz packet Ranch Dressing Mix
- 1 head garlic – cut in half at the equator
- 1 bay leaf
Instructions
- Put chicken in the bottom of the instant pot. (If using chicken breasts, cut them in half like a book, if possible).
- Add all of the other ingredients and close the lid and lock it in place. Close the steam valve.
- Set for 8 minutes and click the “keep warm” button to turn it off.
- When the cook time is finished, allow to naturally release.
- Remove the garlic and bay leaf before serving.
- Serve hot over rice, noodles or a potato. See Notes for thicker gravy.
Notes
- You can use frozen chicken, but the gravy may not infuse the meat as much. Cook for 15 minutes and allow to naturally release.
- To make a thicker gravy, mix 2 heaping tablespoons of cornstarch with 2 tsp of cold water. Mix well to milk like consistency. If not as thin as milk, add a few drops more of cold water. Remove the chicken and the bay leaf and the head of garlic and mix the cool cornstarch slurry into the drippings in the instant pot. Use a whisk and slowly whisk it in until it thickens. Add the chicken back to the instant pot.
- Thighs make for a more flavorful and tender dinner.
