Ingredients

  • 1-2 tbsp Olive Oil
  • 1/4 cup Honey
  • 2 tbsp Full Grain Mustard
  • 2 tbsp Dijon Mustard
  • 2 tbsp Balsamic Vinegar

Instructions

  • Wash and peel your carrots.
  • Cut carrots on a bias about 1/2 inch thick
  • In a small bowl mix honey, dijon mustard, full grain mustard, and balsamic vinegar. Set aside.
  • In a large pan head olive oil on medium heat.
  • When pan is hot, add carrots, salt and pepper. Sautee for 10 minutes.
  • Add honey mixture, and continue to cook for an additional 10 – 15 minutes. Stir frequently
  • Continue to cook until carrots are fork tender (meaning a fork easily pierces the carrots
  • Remove carrots, serve with parsley, and balsamic glaze for garnish

Notes

  • You don’t have to use tri-colored carrots for this recipe!  Any carrots will work just fine, but you may have to adjust cooking time. 
  • Add some fresh garlic for extra flavor
