Here’s How It’s Done…
STEP 1. Cook the bacon and dice it up, set it aside.
STEP 2. Dice the Tomato
STEP 3. Dice the green onions.
STEP 4. Grate the Cheese ( use pre shredded cheese for a shortcut, but a super sharp cheese like Cabots is best, and that doesn’t come pre shredded). Frankly, it’s the sharpness of the cheese that makes this bacon cheese dip something really special!
STEP 5. Cut up the cream cheese.

STEP 6. Mix it All Together, put it in a baking dish and bake at 350 for about 25 minutes! YUM!

Can I Make This Bacon Dip in a Crock Pot?
Yes! Absolutely! Simply mix it all together well, put in the crockpot set on low for 3 hours and you’ll be ready for party time!
How Can I Make This Hot Bacon Dip in the Microwave?
Easy! Mix all the ingredients together and put in a microwave safe bowl. Microwave on high for 2 minutes, stir well, repeat for 1 minute intervals until heated through.
***NOTE, the top will not brown slightly like it does in the oven, but the cheese will all melt and that will work just fine.
Can I Make Hot Bacon Dip Ahead?
Yes, mix it all together and refrigerate for up to 3 days. Take it from the refrigerator and bake just before serving.
How Long Is Bacon Dip Good For?
Don’t leave sitting out for more than 2 hours. Refrigerate for up to 5 days.
Can I Freeze Hot Bacon Dip?
Yes, you can freeze this bacon dip, but the consistency does change slightly. I would recommend just making this right before you plan to serve it.
OR
Freeze the individual ingredients (cheese, cream cheese, chopped cooked bacon, tomato, onion) and then add then thaw and mix when ready to bake it.
Honestly though, you have no worries about having leftovers, people GULP this stuff down. I’ve never ever had any leftovers.
Can I Use the Stand Mixer or Hand Mixer to Mix This Up?
You can, but do not add the tomatoes, onion or bacon that way. Add those and mix by hand. The mixer beats those up too much and then they just become part of the cheese. It is much prettier with larger chunks of tomato, bacon and onion.
What Can I Do With The Leftovers?
First of all, there won’t be any (unless you make a triple batch because you are HOPING for leftovers!).

Can I Use This As a Spread?
Yes! Of course! It will be hot and easily spreadable. Spread it on toast, crackers or even your fingers. It’s that GOOD!
Does This Hot Bacon Dip Hold Up When It Cools Down?
Yes! The consistency is the same (it does get a little thicker) but it is still just as delicious!
Why Do I Have the Grate the Cheese?
If you use pregrated cheese, you’ll find that the consistency is different. Pregrated cheese is treated to keep it from sticking together and that can lead to a different mouth feel with this dish, some might call it gritty.
Can I Leave the Green Onions Out of Hot Bacon Dip?
Yes, of course you can, but it will be missing a real “fresh” element that makes this dip delicious!
Can I Add Mushrooms to This Dish (or something else)?
Be my guest to give it a try. You might want to saute something that you are adding to make sure that it is appropriately softened for the dish.
Tips and Tricks for Hot Bacon Dip
- Go ahead and fry up the entire package of bacon, you’ll want to sneak a few while you are working on everything else.
- There are about 12 slices of regular sized bacon in a 1 lb package. This recipe calls for 8.
- Fry the bacon a little more crispy than you usually would, it gives more flavor.
- Make SURE to remove the insides of the tomato and only use the outer meaty part, the seeds and tomato goop will make this recipe soupy.
- Dice your green onion pretty small.
- An 8oz block of grated cheese is more than a cup, but it is the right amount of cheese for this recipe.
- Use room temp cream cheese, or your arms will get sore trying to stir it all in.
- Be sure to stick this in the refrigerator after 2 hours.
PRO TIP: Save out a little tomato, bacon and green onion to sprinkle on the top.

Hot Cheesy Bacon Party Dip
Ingredients
- 8 slices bacon - cooked crispy and crumbled
- 8 oz cream cheese room temp, cut into 1" blocks
- 1 c mayo
- 1 c cheddar cheese buy the best sharp cheese you can find, grate it yourself
- 2 whole Roma tomatoes seeds and inner goop removed , only use the outside meat and chop fine.
- 1 bundle green onions – finely chopped
- 2 Tbs minced garlic pre minced, jarred in oil is fine.
Instructions
- Preheat oven to 350
- Mix together cream cheese, cheddar, mayo tomatoes, onions, garlic and bacon in a bowl.
- Put in an oven safe dish and bake for 20 mins on 350 or until bubbly and browning on top.

Gina - you are so funny! I never thought about having Garlic Kale chips with Hot Cheesy Bacon Party dip before! Believe me - the bacon dip will be a hit! WE LOVE IT! Maybe to counterbalance the calories - you could use the kale chips as the dip carrier! :) Have fun with the snow! :)
