Here’s How It’s Done:

STEP 1. Label your Gallon Size FREEZER  ziplock bag with the date, name of what will be in the package and a use by date. (6 months).

STEP 2. Put the potatoes into the bag, squeeze out as much air as possible and set it in the freezer.

You can make mashed potatoes up to 2 days before you plan to use them. When ready to use, heat on the stove top over low heat, add a little milk and stir frequently. 

Can Frozen Mashed Potatoes Go Bad? 

Yes, they can. If you notice freezer burn, ice crystals packed into the bag or an off smell when thawing, then throw them away.

This was exactly what I was looking for. I wanted a recipe that used ONLY potatoes and NOTHING else. Potatoes came out teriffic. I didn't realize how easy it was or I would have done it sooner. Thanks for the help.

This is important:

To keep good texture and consistency, use half and half, not milk, or even better, light cream. Lots of real butter. The thing about mashed potatoes is they will develop minute crystals which can make potatoes have a grainy texture when frozen. Using lots of fat to coat the potatoes thoroughly will keep that from happening. Add a bit more half-and-half, etc., when reheating.
