You might have tried my classic buffalo chicken dip and like me thought, “I wonder how this would taste smoked on the grill!” What? You didn’t automatically think that?
That’s what you have me for, I guess. We can still be friends.
The answer is, “It tastes GREAT!”
Here’s Why This Recipe Works

Here’s What You’ll Need:
- a small rotisserie chicken – shredded
- Bacon – cooked crispy
- butter
- cream cheese
- hot sauce (we like Franks)
- Mayonnaise (Dukes for this one ya’ll)
- Shredded Cheddar Cheese (Pepper Jack or Gouda does this one right)
- Hidden Valley Ranch Dressing powder
- Liquid Smoke
- Minced garlic
Here’s How It’s Done:
STEP 1
Cook your bacon and pull the meat off of the chicken.
STEP 2.
Put everything in the pan and carry it to the grill or smoker and get those going.

Do I Have to Use a Smoker or a Grill to Make This Dip?
No you don’t, however, you’ll be missing some of the smokey outdoor flavor that makes this so yummy!
However, I’ve built this recipe so that it has some inherent smokey flavor in the mix so, no worries my friend!

Can I Use Smoked Chicken In This Recipe?
Wow! You CERTAINLY can! That would add a big bang of flavor that you can’t get any other way!

Do I Have To Use the Ranch Dressing Packet?
Nope. You do NOT! However, it adds that classic taste that you get when you dip your chicken wing into the ranch dressing, see how that works?
I recommend at least trying it the first time, and then try it the second time leaving it out and let me know what you think.
I think it’s better left in.
Can I Freeze This Dip?
No, it breaks when you thaw it. Besides, you won’t’ have any left anyway. People eat this like crazy!
How Long Does This Dip Last?
It will last for 5 days covered in the fridge. Don’t let it sit out for more than 2 hours at a time.
What Do I Serve This With?
- I like to serve this as an appetizer before a light meal (like a salad bar or potato bar).
- Makes a perfect game day treat!
- Do a cocktail hour and offer this with beers on the patio.

Tips and Tricks
- This recipe uses rotisserie chicken, however, you may use any chicken you have. Simply cook it and shred it. You’ll need about 2 lbs of meat.
- To make this vegetarian, use the Quorn vegetarian chicken pieces. Ya’ll, they are really super good.
- It’s fine to substitute the lower fat cream cheese or neufchatel instead of cream cheese.
- Use any type of hot sauce you prefer, but for a classic buffalo chicken flavor, you’ll want to use Franks Classic Hot Wing Sauce.
- Substituting the jarred minced garlic for fresh is fine as well.
- Although we prefer the thick bacon at our house for eating, I find that the inexpensive thin sliced bacon works best for this recipe in regards to texture and crispiness.
- Garnish with chopped tomato, onion, cilantro or extra bacon.

Smoked Buffalo Chicken Dip
Ingredients
- ½ lb bacon cooked crispy and chopped
- 1 small rotisserie chicken - shredded
- 8 oz block of cream cheese - room temp
- 1/2 cup hot sauce
- 3 Tbs butter melted
- 1/2 Cup Mayonnaise
- 1 Cup Shredded Cheddar Cheese
- 1 pack of hidden valley ranch dressing powder
- 1 tbs onion powder
- 2 Tbs of garlic minced
- 1 Tbs liquid smoke
Instructions
- Cook the bacon crispy and once cooled, chop small. Remove the chicken from the bones and shred or chop and set aside.
- Place everything into an aluminum pan (9x12).
- Preheat the grill to low (or use your smoker per manual). (If using a smoking tube, load the tube and light it).
- Turn one side of the grill off. Set the pan onto the UNLIT side of the grill. Close the lid and place the smoking tube onto the lit side of the grill. Allow to smoke and grill until the cream cheese and other items are melted and mix together easily. (about 30-45 minutes).
- Serve hot
