Velveeta Queso Blanco

Here’s How You Do It

STEP 1. Cut the cheese into 1 inch or smaller cubes.

STEP 2. Add a can of Rotel Tomatoes and Chilis (I used the fire roasted type for this recipe, but any of the heat levels will work). 

 

STEP 3. Heat over low heat until the cheese is melted and you are able to completely mix in the Rotel (or heat in crockpot as shown here) Serve Hot!

What Is Queso Blanco? 

The name Queso Blanco literally means White Cheese. It is a completely melted cheese that is often served as a dip or as a topping in American Mexican Restaurants and is one of the key components of the ACP (Arroz Con Pollo) that is adored in the American South. 

Where Do I Find the Velveeta Queso Blanco? 

It will be at your grocery store where the regular Velveeta is kept. It comes in a smaller 16 oz package. 

What If I Just Want Mine PLAIN? 

Follow the directions below, but do not add the Rotel dip. Simply melt the packaged queso blanco for a plain cheesy dip. 

Can I Use Something Besides Velveeta?

You can use any of the available Queso Blancos, however, the texture may be slightly different. Plus, I’ve found that the other brands are much more expensive. 

How Can I Thin My Queso Blanco Dip? 

You can thin this dip by heating it gently on the stovetop over low heat and add 2 Tbs of milk. If this isn’t thin enough, simply add a small amount more and repeat until it is as thin as you prefer. 

Can I Use a Different Type of Rotel? 

Sure! You Can Use any of the heat levels or the fire roasted. We particularly enjoy the fire roasted. It gives it a slightly smoky flavor. 

Can I Freeze My Dip? 

You CAN freeze it, however, it’s just as easy to make what you need when you need it rather than going to the trouble of freezing it.

How Long Will It Last? 

This white queso dip will last for up to 5 days in the refrigerator. Do not leave it out of the fridge for longer than 2 hours. No worries, it will be slurped down in no time at all! 

Typically, people are scraping the bowl with their fingers and then licking their fingers. 

What Can I Serve with Queso Blanco? 

This dish is terrific with nearly any meat, but especially a more dry and lean cut like

  • Pork Loin or Chicken Breasts
  • Also terrific over rice!
  • Let’s not forget how good this is with tortilla chips! 

How To Make Queso Blanco In a Microwave

  • Follow the instructions through step 1 below and place into a microwave safe bowl.
  • Microwave for 2 minutes, stir, then repeat in 1 minute intervals until the cheese is melted and the tomatoes and chilis are well incorporated. 

How To Make Velveeta Queso Blanco in the Crockpot

  • See the Recipe below and follow through step 1.
  • Put the lid on the crockpot and set it on low.
  • After 2 hours, stir well, replace lid and allow to heat until the cheese is melted completely through.

Tips and Tricks

  • Initially, you will think that there is too much liquid in the Rotel for the dip, but it will mix in and be fine. 
  • You can increase the heat by using the hotter Rotel tomatoes and chilis. 
  • Stir frequently when preparing on the stovetop, it will want to stick to the bottom of the pan. 
  • This dish is a perfect party dish! Everyone gathers around the cheese bowl! 
  • You can really add a bang to this dish by adding some meat like ground beef or sausage.
  • Chopped green onions give a fresh flavor and a lovely color as well. 
  • The scoop type chips work great with this dip but encourage guests to dip a LOT each time! You’ll want to make a double batch (at least) if offering scoop chips. 
  • Serve this as a topping for a potato bar or with pasta or rice! 
  • If you need to thin this down at all, add 2 tbs of milk initially and stir well till incorporated, increase by the 1 tbs until it is as thin as you like. Remember that as it cools, it will thicken.

I recently had this yummy dip at a girls’ weekend. It was almost as warm and delicious as the friendships we enjoyed, and best of all because it was so simple to make, we had plenty of time to enjoy each other’s company without a big mess or lots of prep!
