This White Chocolate Almond Bread Pudding is one of my most favorite desserts! Its easy to make, tastes delicious, and its not a dessert that people have often so its a special little treat.

A few years ago (almost 10…) when I was in college I started helping Mom some with this website. One of the first recipes I wanted to make was Bread Pudding.
I had forgotten alllll about that recipe until this weekend when I was looking through the site, and saw that old post. And I just want to toot my own horn… I have come a long way since then! It was time to make an elevated version of one of my first recipes!
What is Bread Pudding?
Bread Pudding came into being in about the 11th century. Cooks were trying to find a way to use stale bread, and rather than throw it out, they soaked the bread in a sweet liquid and thus bread pudding was born! Today, the sweet liquid that we use is called Crème Anglaise, and is made with cream, sugar, and egg yolks. Its really easy to make even though it sounds fancy and complicated. You heat up the cream and sugar, and then VERY slowly add it to the egg yolks while wisking it. You can add vanilla at the end!
Ingredients for White Chocolate Almond Bread Pudding
There are really only a few ingredients for this dessert, cream, sugar, egg yolks, vanilla, bread, white chocolate chips, and almond slivers. The great thing about this recipe is that you can put WHATEVER toppings you want in! If you wanted to do dried cranberries, white chocolate and almond you could!
You could just do milk or dark chocolate chips and that would be delcious. The world is your oyster with this recipe… but I wouldn’t reccomend adding oysters…I’ll make a list of things that would work
- Milk Chocolate or Dark Chocolate Chips
- Any dried fruits (dried cranberries, or cherries would be perfect for the holidays!)
- Bananas
- Apples
- Cinnamon
- Any kind of nut (walnuts, pecan, and almonds would be best though)
- Peaches
- Apricots
- Strawberry
Now! The fun part. Take two to three items off this list that you like and think might go together and you have a whole new bread pudding creation! A white chocolate, and peach bread pudding sounds heavenly!

White Chocolate Almond Bread Pudding
Ingredients
- 3 cup Heavy Cream
- 1 1/2 cup Sugar
- 12 Egg Yolks
- 1 tsp Vanilla Extract
- 1 Large Loaf French Bread cut into 1 inch cubes
- 1 bag White Chocolate Chips
- 2 oz Sliced Almonds
Instructions
- Pre-heat oven to 350 degrees
- Crack 12 eggs into a bowl, and separate out the yolks.
- In a sauce pan, heat heavy cream and sugar until it just starts to bubble
- Slowly add cream and sugar mixture to egg yolks while whisking vigorously. Repeat this step until about half of the cream mixture is mixed in with the egg yolks.
- Add the egg yolk and cream mixture to the sauce pan, and continue to heat for an additional 3-4 minutes.
- Remove from the heat, add vanilla, and stir. Set aside.
- Cut up the french bread into 1 inch cubes
- Add french bread, and the egg yolk mixture to a large bowl and let sit for 30 minutes
- Add white chocolate chips, and sliced almonds to the bowl and mix gently
- Add mixture to a greased casserole dish and bake for 35-40 minutes
- Remove and let cool for 30 minutes before serving
Notes
- Make sure that you pour the warm cream mixture very slowly into the egg yolks. This is call tempering and will keep the eggs from becoming a scrambled egg texture.
- If this is your first time tempering, you can pass the mixture through a fine mesh strainer when you are done cooking it to get out any lumps!
- Add a pinch of cinnamon to the mixture for a warm fall flavor.
- Buy your almonds pre-sliced! No one wants to chop up almonds!
- Save some white chocolate chips to put on top before baking.
- Don’t skip the 30-minute cool down before eating! This allows the bread pudding to set. That way, when you cut into it you will get a solid piece rather than individual bread chunks. It’s good either way though!
