Equipment

Ingredients

  • 4 oz Sharp Yellow Cheddar hand grated
  • 4 oz Pepper Jack Cheese hand grated
  • ½ Cup Dukes Mayonnaise
  • ¼ cup Chopped Jalapeños and Banana Peppers fresh or pickled!
  • 3 stalks of green onion - chopped using both white and green parts
  • ½ teaspoon kosher salt
  • 1 ½ teaspoon ground black pepper
  • ½ teaspoon granulated white sugar
  • Optional: ½ teaspoon hot sauce Sriracha is preferred but Franks Texas Pete's, Cholulus, etc. will do for a substitute.

Instructions

  • Gently mix all of these together and allow to sit in the fridge for at least an hour to allow the ingredients flavor to meld.

Notes

  • Always shred your own cheese - pre-shredded varieties contain anti-caking agents that affect the texture.
  • Use room-temperature cheese for the smoothest blending and best consistency.
  • Refrigerate for two hours before serving to let flavors develop.
  • Add extra mayo one tablespoon at a time if the spread doesn't mix together well.
  • Store in an airtight container and use clean utensils when serving.
