It is NOT hard to make a Zesty Cucumber and Tomato Salad AT ALL! In fact, I would call this a beginner salad BUT it definitely doesn’t taste like a beginner salad at all! It is delicious!

Rather, once you have cut up the cucumber, there isn’t that much left to do!

This salad will last several days in the fridge (up to 5 days)

TIPS AND TRICKS FOR ZESTY CUCUMBER TOMATO SALAD
- Feel free to cut the cucumbers into disks, we simply find that cutting them into pie shaped pieces is the easiest to eat.
- This salad works with either regular sized tomatoes or the cherry tomatoes, which are perfect if you are making this salad in the winter time.
- If you don’t have garden fresh cucumbers, then please use the hot house cucumbers (the long ones at the grocery that are usually wrapped in plastic wrap) the skin is much more pleasant on these cukes, but I still peel them.
- Adjust the ingredients as you see fit, an approximation for this salad usually works. Experiment a little!

Zesty Cucumber Tomato Salad
Ingredients
- 2 small cucumbers - cut into small chunky pie pieces
- ½ tsp of salt
- 2 medium fresh tomatoes - chopped
- 1 medium sweet onion like Vidalia - chopped
- ½ Cup Cider Vinegar
- 1 Tbs granulated white sugar
- ½ tsp ground mustard
- 1 tsp fresh thyme
- 1/2 tsp ground onion powder
- ½ tsp ground garlic powder
Instructions
- Lay Cucumber pieces out on a paper towel on top of a cookie sheet and sprinkle with ½ tsp salt. Let stand for 30 minutes (paper towel will become damp).
- Rinse the cucumbers after 30 minutes and drain well.
- In a large bowl, place the cucumbers, tomatoes and onion.
- Whisk together, in a small bowel, the vinegar, sugar, mustard, thyme, onion and garlic powders. Pour this mix over the cucumber mix and toss together.
- Cover this salad and refrigerate for 4 hours.
- Serve with a slotted spoon to drain the dressing off as it is served.

I am just trying this recipe..,it’s only for me so I used 1 tomato, 1/4 of a large cute, and slice red and white onions.I used 1/4 rice wine vinegar with roasted garlic 1/2T if sugar and stone ground Dijon mustard...it’s in a pie plate in the fridge waiting for all ingredients to marry I figure 30-45 should do it and the. I will put it on a bed of lettuce...thanks it’s been fun reading your comments. P.S. the cheesy onion casserole is in the oven right now and I will eat with crab cakes...yumm😋

This is a wonderful side to a Boston Butt roast and dinner guests all got the recipe. At least, the ladies did.
Thank you for the 'tip' about slicing, salting and allowing the cucumbers to sweat before adding all ingredients together. It answers my age old question about why the excess water in my salads? Thank you, thank you. Please excuse me now while I go and do my Happy Dance!
